Colton’s Texas Chili

Ingredients

  • 3 lb Born & Raised Chuck Roast
    • Salt, Pepper, and Garlic Powder
  • 1 lb Born & Raised Ground Beef
  • 2 tablespoons olive oil
  • 2 medium purple onions (finely chopped)
  • 2 jalapeno peppers (seeded and diced)
  • 6 cloves minced garlic
  • 2 cans crushed tomatoes w/juice (28 oz)
  • 1 can chipotle peppers in adobo sauce (7.5 oz)
  • 2 tablespoons of tomato paste
  • 1 beer (optional) or 12 oz beef broth

Seasoning Mix

  • 2 tablespoons chili powder
  • 2 tablespoons smoked paprika
  • 1 tablespoon ground cumin
  • 1 tablespoon oregano
  • 1 teaspoon ground cinnamon
  • 1 teaspoon cayenne pepper

Optional Toppings

  • Shredded Cheddar Cheese
  • Sour Cream
  • Cilantro

Directions

  1. A. (Optional) Season the chuck roast with your salt, pepper, and garlic powder and then smoke until tender and cut into ¼-½ inch pieces. 
  1. If not smoked, in a large pot, cut the chuck roast into ¼-½ inch pieces and brown the chuck roast and ground beef on both sides and set aside.
  1. Add your 2 tablespoons of olive oil and saute the onions and jalapenos until softened.
  2. Add the seasoning mix, tomato paste, and browned beef back into the pot.
  3. Add in garlic, crushed tomatoes, chipotle peppers, and beer at this time.
  4. Bring chili to a light boil and then turn the heat down to low to simmer.
  5. Simmer for 3-4 hours stirring occasionally.
  6. If chili starts to become too thick, add a little extra beer or broth.
  7. Serve with cheddar cheese, sour cream, and cilantro.
